Plexconnect would be fantastic
The Plexserver is really nice, but could be great with the addin of plexconnect for people with AppleTV.

PlexConnect is maintained by a group of individuals that have an active forum over on Plex's forum site.

This isn't something I would ever need. I don't own apple products and don't anticipate that changing in the near or far future. The folks on that forum should be able to help you, just explain to them that you are running a copy of BusyBox Linux and not a full blown Ubuntu install.
If you still get stuck over there, I'm known on that fourm as MikeG6.5. I'll try to help as best I can. Remember, though, I have no way to test it out, so I won't do an install on my own...
