I currently own 3 x Synology NAS units but am looking to get a unit from another manufacturer just to make my setup a little more diverse
At the moment on the Synology system I used their SHR RAID and start my system with a couple of disks and add and expand, I know you don't have SHR RAID equivalent but just wondering if I bought an 8-bay system with 3 disks initially (RAID 5) could I add and expand the current volume or would I need to add news disks as new volumes?

What you are describing is exactly what I am doing with my 608T.  Currently running 3 * 3TB in RAID5 with plans to add more as capacity is required (and finances allow 
 )
