Applications Logs

Hey guys,
I was just wondering if you guys have any tips regarding tracking down the logs of your application into one single place ? I was hoping to use the System Log tool to customize it and set it up to track anything related to a log file, but nothing like that is available :-/

Any ideas ? any customizable log application ?
