ext4 block based snapshots
I read somewhere that block based snapshots are better and safer than full volume snapshots like with btrfs. From what else I've found after that, iSCSI LUN's can have this? Each LUN is basically a block of data out of the whole? Something along those lines. So how exactly how I get this setup and is it possible to do without wiping all of my current data?

Simply follow the wizard to create iSCSI LUN. You don't need to wipe your volume data.

what would be a reasonable size block? I'm assuming i don't wanna make them too large or else i'll run into the same problems? I have about 20TB available

You can extend LUN size later if you enable thin provisioning.
