I had an AS5102t that died (motherboard went bad.)
So now I have an AS6604T on the way and I understand that I should be able to keep my data from the 2x8TB disks that I have from the 5102.
So how do I go about setting up the new machine and try to keep my data from the disks I have?

Simply put all old disks into the new asustor NAS, then power it on. Your data should be ready for you. (if all disks are all right without damages.) However you should check AppCentral when the new NAS is ready. You might need to re-install apps.
