Can I mount volume1 as a share?

I would like to mount volume1 as a network drive on Windows to make backing up the NAS to various cloud services easier.

I can mount each share individually but that could be a lot of letters.

Is this possible?

Or should I just create one share and put everything in there? I do like having various devices only having write access to their own shares, but it makes it hard to do a full backup of the NAS.

No, you cannot mount volume to PC (only shared folders).
You can ask each user to put their own data to "home" share folder.
