The corresponding english error message is: "Can’t create or write into the data directory /volume1/...".
I used the tutorial shown here: viewtopic.php?f=49&t=1835
but used nextcloud, which in principle should also work like that and i'm wondering whats going wrong

Sounds an issue related to shared folder permission. You can try to grant everyone R/W permission for that shared folder. (ADM -> Access Control).

I tried that and also checked every folder-permission, but still no luck.
Is there maybe somewhere a log file, where i can check what exactly doesn't work or do you have any other ideas?

mm... I don't know where is the log file. And I just removed the app, and re-installed it. The progress is still very smooth (except that I need to create another admin user)!!

For what purpose did you create an additional admin? I didn't do it during my installation, so that could be the key...

Nope. It's required in installation page (the first field and the second field). If I applied the original admin user (that I created during my first nextcloud installation), it will pop up error. So I need to create another one for nextcloud.

I tried a reinstall, but the same error happens again. But i found a log file in /volume1/Docker/nextcloud/nextcloud.log
Eacht time i try to do the setup an entry is added, which looks like this:

I'm not sure if something went wrong during the installation and how i could get access to that folder to see what is there.

So, you install it under Docker? That should a totally different story from mine.
