I used file explorer to create a new shared folder, and now would like to rename or delete it. I can't figure out how do do this from within file explorer - am I missing something here?

OMG, I found it accidentally myself! One has to go into the ASUSTOR app "Access Control > Shared Folders". From there folders can be renamed/deleted. Not very intuitive
